Easiest recipe I know is for dulce de leche (also known as cachete). Easy enough that even my mom could make it, and my blowing up something in the kitchen at work (if only twice) is still enough to ensure my posterity.
Think of it as legacy building.
So. Take a can of condensed milk (not evaporated-I'm looking at you, Aileen) and put it in a pot of water suuficient to cover the can. Unopened. Get this up to a simmer and cook for three hours. Too high a direct heat and you might get some grainies, and the whole point is silky creamy goodness. The longer you simmer the can, the darker the caramel stuff inside will be. Anywhere from two to four hours works by me, but I like three.
(Five is right out! Ahem.)
Once this is done, let it alone or cool it with lukewarm water and set it in the fridge. When I was a kid, we'd open the can and eat this stuff by the spoonful, but it's wonderful on vanilla ice cream or with oatmeal chocolate chip cookies or on consenting adults.
